I flew in Millau during the Bleriot cup in the 90's. I really enjoyed it, the take off is a little committing but the flying is generally really easy and stress free.
The gorge du tarn is worth a look on none flyable days.
I pretty sure Bill and Andrew B went there a couple yers back and may have info on accom and travel.

been there a few times now one of my favorite places in France, it is a beautiful old town with good restaurants and bars and has flying sites for all directions within ten minutes, it is also gets much less crowded than the likes of Annecy. But can sometimes suffer from wind in mid summer, but as Ali says if its not flyable try a bit of kayaking in the tarn gorge great fun.
If your planing on camping there are loads of campsites one of which we found was particularly flyer friendly and supplied us with site information and also had its own landing field. Most of the site info is available online. Hope this has been of some help I also have a contact number for a British owned b&b.
If you want to know more give me a bell
